I came across this super easy recipe from the Chef Mommy blog on Pinterest. What makes it easy? It uses the crock pot! Nothing better than a fix it and forget it meal, right?
Definitely take the suggestion of adding beans, scallions and cheese. It brings this dish up a notch. We don't care for cilantro (gasp!) so I left that out. Make a side of (brown) rice and you've got a great meal (well, you'll need a veggie too). :)
Ingredients:
1 pound boneless skinless chicken breasts
1 can cream of mushroom or cream of chicken soup (I used cream of mushroom)
1 cup salsa
1 package taco seasoning (I used 1 Tbsp of my homemade taco seasoning)
1 cup sour cream
cilantro, for serving (optional)
(I also added a little shredded cheddar-jack, black beans and scallion on top)
Directions:
Put chicken, soup, and salsa in slow cooker. Sprinkle taco seasoning over everything. Cook on low for 6 hours. If shredding the chicken, pull the breasts out and shred; return back to slow cooker. Stir in sour cream and heat just until everything is combined.

ReplyDeleteStarting to cook this now,just not sure when to add the cheese and scallions. I put in the beans with everything else and just turned it on.... Thinking that maybe the last two go in once you add the sour cream.
